Are you ready to try a vegan diet?

Have you ever thought about becoming a vegan?  Well, this month could be the perfect time to try a vegan diet, even if it’s for a short time. In the UK, January now also becomes Veganuary.  The idea was launched in 2014, and the name comes from a UK-based non-profit company of the same name. Their mission is to encourage people to consume only plant foods for the month of January. 1.3 million people committed to Veganuary for 2019.

1.6% of the UK population, which equates to 600,00 people are already vegans.

What does it mean to be vegan?

We talked about this in our blog back in November in more depth (https://www.creativenaturesuperfoods.co.uk/world-vegan-month/ ) , but basically, vegans don’t consume, meat, fish, birds, cow or goat milk, honey, eggs, or foods made with any of these or other animal products, such as gelatine, beef or chicken broths, lard or tallow.

What are the three non-negotiable products for vegans?

*Legumes:

they contain a number of important macro and micro nutrients like protein, iron, zinc, folate, fibre and potassium.

*Fruit:

berries, in particular, seem to be the best of the fruits, and boost immune cell activity, and can protect the liver and the brain.

*Greens;

Dark-green, leafy vegetables may be the healthiest foods on the planet.

They offer the most nutrition per calorie and the greatest array of disease-fighting, performance-enhancing nutrients.

Breakfasts:

*Vegan Cacao and Chia Porridge bowl

This is a delicious, quick and easy breakfast which is packed with healthy, energy-releasing carbohydrates, healthy fats and fibre. The ingredients include, oats, millet or buckwheat flakes; Creative Nature superfoods, Chai seeds, maple syrup, hazelnut-rice milk, raw cacao, dried white mulberries, grilled unsalted hazelnuts, dark chocolate chips, Chai seeds.

Excluding the toppings, you mix your ingredients together, and place on a medium heat. Cook for 10 minutes, continually stirring, and then place into a bowl and add the toppings.

Savoury Dishes: 

*Vegan Maca and Butternut Squash Risotto 

The perfect risotto for cold winter days, and a great way to use superfoods.  Ideal for lunch or dinner. The ingredients: Vegetable oil; onion; risotto rice; white wine (check this is vegan); vegetable stock; butternut squash, roasted, half mashed and half cubed; baby spinach; Creative Nature Maca Powder; dash of lemon juice, salt and pepper.

You sauté your onion in a dash of oil, until translucent. Add your risotto rice, until cooked, then add all of your white wine and keep stirring until the liquid has evaporated. Add your stock, one ladle at a time. Wait for the liquid to evaporate before adding the next amount of stock. Next when all of the liquid is gone, and the rice fully cooked, stir in the mashed butternut squash, maca powder, dash of lemon juice, salt and pepper to taste.

In a separate pan, wilt your spinach and reheat the remaining cubes of butternut squash with a dash of oil. Serve the risotto in a bowl, with the veggies on top and enjoy!
